Stuffed Aubergine

Description
From Katherine, an easier version of melanzana parmigiana.
Ingredients
- Two aubergines
- two tomatoes, chopped small
- 300 gr of mozzarella, chopped small
- two cloves of garlic, crushed
- one tsp mixed herbs
- 2 tbls breadcrumbs
- 1 tbls olive oil
- grated parmesan
Instructions
Halve the aubergines, coat the cut sides with olive oil, dried herbs, salt and pepper, and oven cook for 20 mins at 190 degrees. Mix the remaining ingredients together. Make three longitudinal cuts in each aubergine half. Smooth on filling and sprinkle on more parmesan. Oven cook for a further 15 minutes.
