Lemony Flapjacks

Description
This is from Anna’s friend Imogen, who got it from her friend’s mum. The lemon makes it the best flapjack recipe!
Ingredients
- 6oz/170g butter
- 1 tablespoon golden syrup
- 4oz/115g demerara sugar
- 10oz/285g oats
- Grated zest of half a lemon
Instructions
Pre-heat oven to 170C
Melt the butter, syrup and sugar together in a large saucepan over a gentle heat. Remove from heat, stir in oats and lemon.
Pour into a shallow baking tray or loose-bottomed cake tin and bake for 10-15 minutes until golden.
Remove from oven. Allow to cool for about five minutes then cut into pieces in the tray. Leave to cool until you can remove from the tray without them disintegrating.
