Green beans in tomato sauce

Description
Alice’s version of Grandma (Rachel’s) recipe. Alice says: this was one of the first recipes I ever learnt when I first learnt to cook, and Freddie and Lily very kindly dubbed them ‘watery beans’.
Ingredients
- 500-750g packet frozen green beans, or the same of fresh (easiest in Donostia, where they are really stringless)
- 2 or 3 tablespoons tomato puree
- 1 tablespoon olive oil
- Salt
- water
Instructions
Put beans in a saucepan and add water until
the beans are just covered.
Add salt, oil and tomato puree to taste.
Bring to the boil, lower heat and simmer, uncovered, stirring occasionally until soft – about 30 to 45 minutes, or until sauce thickens.
Good as a mezze, or served with rice and a green salad.
There’s also a meaty version: fry onions, add some cubed beef and brown, then add beans and stir, then tomato paste (or a tin of chopped tomatoes), season, then simmer till the meat is tender.
