Artichoke Toasties

Description
Adapted by Catherine from Celia Brooks Brown’s Entertaining Vegetarians. It has now become a family favourite and makes a delicious party dish or starter. Quantities are for 24 toasties.
Ingredients
- 12 slices medium sliced white bread
- 400 gram tin of artichoke hearts cut into quarters
- 60 grams grated parmesan
- 1-2 finely chopped mild green chillies
- 3 heaped tbsps mayonnaise
Instructions
You will need two shallow mince pie or cupcake tins each with twelve slots.
Preheat oven to 200C.
Mix artichoke pieces, parmesan, mayonnaise, and chillies together till well blended. This can be done the day before and the mixture kept in the fridge.
Put the bread slices on a board, and use a 2-inch cutter or glass tumbler the same size to cut two rounds from each slice. Butter one side generously and press into the tray slots butter side down. Flatten well with your finger-tips. Put one spoonful of the artichoke mixture into each bread case. Smooth down the tops and then cook for 12 to 15 mins till crisp and golden. Cool briefly on a wire tray.
Can be served warm or cold.
